    Brioche with Vanilla Infused Rhubarb

    • Cooking time: 5 minutes
    • Total time: 10 minutes 10 minutes

    Serves: 2


    • 400g pack Cooks' Ingredients Rhubarb
    • 50g sugar
    • 1 vanilla pod, split in half lengthways
    • 4 slices butter brioche loaf
    • 25g butter, softened


    1. Cut the rhubarb into 3cm pieces and place in a saucepan with the sugar and vanilla pod. Cover and cook gently for 3 minutes then remove the lid and simmer for a further 2-3 minutes, or until just tender. Remove the vanilla pod.
    2. Meanwhile, spread each side of the brioche slices with butter. Heat a griddle pan and cook for 1 minute on each side until golden. Top the brioche with the warm rhubarb and serve with a scoop of vanilla ice cream (optional).
