brocolli and stilton soup

After a supper party there is so often a little stilton cheese left in the frig which stays there until probably being binned. This quick and simple recipe is an excellent way of using up this stilton by making a very tasty soup.

Serves: 4


  • Medium onion (chopped) and 2 garlic cloves (chopped)
    2 tbsp tomato puree
    Small head of brocolli
    Left over stilton cheese (to taste - I like a good size piece)
    Seasoning - organic vegetable boullon, salt and freshly ground pepper
    Double cream


  1. Sweat the onion and garlic in a little oliver oil and butter until soft but not brown. Add tomato puree and seasonings, stir well. Add chopped brocolli and cover with boiling water. Simmer until brocolli is tender. Remove from heat and whiz to puree. Add chopped stilton. Stir to melt.
  2. Rehead gently before serving into 4 soup dishes and swirl double cream on top. Delicious!!
