    Brown Sugar Gold Leaf Meringues

    Makes: 8 meringues


    • 4 egg whites
    • 100g caster sugar
    • 80g light brown sugar
    • 4 sheets edible gold leaf, halved


    1. Beat the egg whites until soft peaks form. Add the caster sugar gradually and beat until the egg whites are thick and glossy. Sift the brown sugar into the meringue mixture and beat well.
    2. Spoon the meringue onto baking paper and use a palette knife to form rounds. Lay a piece of gold leaf on each meringue. Place in an oven preheated to 120°C/gas mark ½, and bake for 1 hour or until firm. Allow to cool in the oven.
