    Brussels Sprouts

    When just tender with a little 'bite', sprouts are the perfect accompaniment for turkey. Fresh sprouts are available either loose in 1kg or 500g bags, or on the stalk. Sprouts on the stalk will stay fresh for longer if left in a cool place.

    • 750g Brussels sprouts
    • Knob of unsalted butter
    • Freshly ground black pepper


    1. Prepare the sprouts by discarding any coarse outer leaves. Using a sharp knife, cut a deep cross into the base of each sprout (this helps them cook more evenly). Pour 5-6cm of cold water into a large pan and bring to the boil.
    2. Place the sprouts in the boiling water, cover and boil for 5 minutes, or until they are just tender. Drain thoroughly and serve immediately, dressed with a knob of butter and freshly ground black pepper.
