    Bush Tomato and Griddled Aubergine Tortilla Wraps

    The flavour of Australia is captured in the Merchant Gourmet's range of sauces. These are made with Bush Tomato Chilli Sauce. Do not allow the grill pan to get too hot or the wraps will over-brown before the middle is cooked.

    • 2 large aubergines
    • 4 tbsp olive oil
    • Salt and freshly ground pepper
    • 4 large wheat tortillas
    • 4 tbsp Merchant Gourmet Bush Tomato Chilli Sauce
    • 2 x 125g packs mozzarella
    • 2 ripe plum tomatoes, sliced
    • 1 pack fresh basil, stalks removed
    • Mixed salad leaves, to serve.


    1. Trim the aubergines and cut lengthways into 4 thick slices. Brush with oil, season lightly and cook, in batches, on a preheated ridged grill pan for 2-3 minutes each side, until they are charred and tender.
    2. Lay the tortillas flat, place 2 slices of aubergine in the middle of each, and spread with the Bush Tomato Chilli Sauce. Top with the cheese, tomatoes and a few basil leaves.
    3. Wipe the grill pan over and place over a moderate heat. Take 2 tortillas at a time, fold the sides inwards to enclose the filling and cook them, seam-side down, for 2 minutes. Turn over carefully and cook for a further 2 minutes until the tortillas are seared, crispy and heated through.
    4. Keep warm and cook the remaining tortillas in the same way. Serve hot with the salad leaves.
