    Cajun chicken with greens

    Serves: 4

    Ingredients

    800g pack essential Waitrose British Chicken Drumsticks, scored
    1 tbsp oil
    2 tsp Cajun seasoning
    400g essential Waitrose New Potatoes, halved
    200g pack spring greens, or cabbage
    100g essential Waitrose Half Fat Soft Cheese
    25g pack chives, chopped

    Method

    1. Preheat the oven to 200ºC, gas mark 6. Place the chicken in a roasting tin, toss in the oil, sprinkle over the Cajun seasoning and roast for 25 minutes until cooked through with no pink meat and the juices run clear.

    2. Cook the potatoes for10-15 minutes until tender, then drain and set aside.

    3. Steam the spring greens for 7-8 minutes. Meanwhile, heat the soft cheese with 2 tbsp water and chives and stir in the greens.

    4. Serve the chicken on the greens with the potatoes.
