    Cajun salmon with spelt rice

    2 Waitrose Scottish Salmon Fillets
    1 tsp Bart Cajun Seasoning
    1 tbsp essential Waitrose Squeezy Honey
    100g frozen essential Waitrose Extra Fine Whole Green Beans
    250g pack Waitrose LOVE Life Barley, Wheatberries, Spelt & Rice or 250g pack Waitrose LOVE Life Quinoa, Chickpeas, Bulgar Wheat & Rice


    1. Preheat the oven to 200°C, gas mark 6. Place the salmon fillets in a small roasting tin and sprinkle with the Cajun seasoning. Drizzle over the honey along with 2 tbsp water and bake for 14 minutes.

    2. Meanwhile, cook the beans in boiling water for 3-4 minutes, then drain.

    3. Cook the spelt and rice pouch according to pack instructions, then stir in the beans. Top with the salmon and drizzle over any juices.
