Calamari

Calamari with coriander, chillie and lime

  • Total time: 15mins inc. Prep Time

Serves: 2

Ingredients

  • 3 Squid cut into Rings
    1tsp Soft Brown Sugar
    Handful of Coriander finely chopped
    1 Red Chillie finely chopped
    Lime Juice
    Knob Butter

Method

  1. Rub the bottom of a heavy frying pan with the knob of butter and add the Sugar allowing it to heat gently.
  2. Add the chopped coriander mixing it with the sugar.
  3. Add the Chillie, Squid and the butter and stir well evenly coating the Squid. Once the butter has melted add the Lime Juice to taste (if from a bottle a couple of squirts should be enough, otherwise about a quarter of a lime). Mix well then leave until the colour starts to turn (2-3 mins), then give a light toss and serve.
