    Calamari in Pesto Sauce with Roast Potatoes

    Serves: 4


    • 4 packs fresh basil
    • 50g grated Parmesan
    • 30g pine nuts
    • 2 garlic cloves
    • 100ml olive oil
    • 50ml double cream
    • 500g calamari rings
    • Roast potatoes
    • 25ml olive oil
    • 1kg potatoes, peeled
    • 25g butter, melted
    • Salt
    • Freshly ground black pepper


    1. Preheat the oven to 200°C/gas 6.
    2. Cook the potatoes whole in boiling water for 10 minutes, drain and leave to cool. Cut the potatoes into small chunks, toss them with the oil and butter, season well, then roast for 25-30 minutes.
    3. Meanwhile, in a blender, blitz the basil (stalks and all), Parmesan, pine nuts, garlic and olive oil until well blended. Season with salt and pepper. Put in a pan with the cream, and bring up to boiling point. Add the calamari rings, bring back to a gentle simmer and cook for 3-4 minutes. Serve the calamari on a bed of roast potatoes.
