    Camel's Tongue

    Serves: 1


    • 5 sage leaves, plus 1 to garnish
    • 2 tbsp sugar syrup
    • 50ml gin
    • 50ml apple juice


    1. For sugar syrup, dissolve 2 tbsp sugar in 4 tbsp water over a medium heat, and reduce by half. Cool, then add sage leaves, slightly crushing them to infuse flavour.
    2. Fill half a shaker with ice, add all ingredients, shake and strain into a glass. Garnish with sage.
