    Caramelised Apples with Calvados

    Ingredients

    • 85g caster sugar
    • 3 tbsp water
    • 2 tbsp red wine vinegar
    • 2 tbsp calvados
    • 2 large cooking apples

    Method

    1. In a frying pan, dissolve 85g caster sugar in 3tbsp of water. Increase the heat until the sugar caramelises, then remove from the heat and stir in 2tbsp red wine vinegar and 2tbsp Calvados.
    2. Add 2 large cooking apples, peeled, cored and cut into thick rings. Simmer gently for 5-6 minutes, turning once, until the apples are just golden. Serve with ham or pork
