Caramelised Bananas

Ingredients

400g tin coconut milk

60 g light muscovado sugar

1 tsp vanilla extract

200g dark chocolate, chopped up

4 small bananas, split in half lengthways

40 g butter, cubed

25 g caster sugar
Method

Put the coconut milk, sugar and
vanilla in a pan over a medium
heat; stir until the sugar dissolves.
Turn up the heat and bring to the
boil, then take off the heat and
whisk in the chocolate until it
melts and forms a smooth sauce.

Heat the grill to medium. Place
the bananas on a roasting tray,
dot with the cubes of butter and
sprinkle over the sugar. Put
under the grill to caramelise.

Serve with the chocolate sauce
and vanilla ice cream
