    Caramelised Bananas

    • Preparation time: 5 minutes
    • Cooking time: 5 minutes

    Serves: 4


    • 400g tin coconut milk
    • 60 g light muscovado sugar
    • 1 tsp vanilla extract
    • 200g dark chocolate, chopped up
    • 4 small bananas, split in half lengthways
    • 40 g butter, cubed
    • 25 g caster sugar


    1. Put the coconut milk, sugar and vanilla in a pan over a medium heat; stir until the sugar dissolves. Turn up the heat and bring to the boil, then take off the heat and whisk in the chocolate until it melts and forms a smooth sauce.
    2. Heat the grill to medium. Place the bananas on a roasting tray, dot with the cubes of butter and sprinkle over the sugar. Put under the grill to caramelise.
    3. Serve with the chocolate sauce and vanilla ice cream
