    Caramelised Bananas with Rum Raisins and Passion Fruit

    Serves: 4

    Ingredients

    • 60g unrefined light soft brown sugar
    • 40g unsalted butter
    • 6 large bananas, peeled and sliced diagonally
    • 100g large raisins or sultanas
    • 4 tbsp black rum
    • The pulp of 8 very ripe passion fruit
    • 50ml water
    • ½ x 200g block Rajah creamed coconut, well chilled

    Method

    1. Melt the sugar in a large frying pan and cook to a blonde coloured caramel then add the butter.
    2. Place the bananas in the pan in a single layer, turn up the heat and cook for 1 minute until they begin to caramelise. Turn the bananas, add the raisins or sultanas and allow to caramelise for a further minute.
    3. Pour the rum into the pan and allow it to evaporate. Carefully remove bananas from the pan. Add the passion fruit pulp and water and stir well. Remove from the heat. Do not allow to boil.
    4. Arrange the bananas on four plates and spoon the passion fruit over. Using a vegetable peeler, slice shavings of creamed coconut over the top. Serve with a scoop of Häagen Dazs Malibu Ice Cream.
