    Caramelised Pineapple with Rum Orange Cream


    • 1 orange
    • 1tbsp caster sugar
    • 1tbsp rum
    • 1tbsp kirsh
    • 140ml double cream
    • 1 large pineapple
    • Icing sugar


    1. Place the zest of a small, roughly grated orange in a bowl with its juice, 1 tablespoon caster sugar, 1 tablespoon rum, 1 tablespoon kirsch and 140ml double cream. Whisk until it forms soft peaks, then transfer to a serving bowl.
    2. Preheat an oven-top grill pan over a medium heat for 5 minutes. Peel a large pineapple and cut into medium thick slices and stamp out the cores. Spread the slices on to a large plate and liberally sift icing sugar over them. Turn over and repeat the process, then immediately place in the grill pan. Grill until flecked golden brown, then turn over and cook for a further minute.
    3. Serve hot with the orange cream
