    Serves: 4

    • 4 Pork shoulder steaks
    • 200ml White wine
    • 2 Garlic cloves, crushed
    • 4 Sage leaves, sliced
    • 1 tbsp Olive oil
    • 2 Eating apples, quartered, cored and thinly sliced
    • 2 tsp Caster sugar
    • 20g Butter
    • ½ Medium red cabbage, finely sliced

    1. In a non-reactive dish, mix the pork steaks with the wine, garlic and sage. Set aside for 15 minutes, or 1 hour if you have time.
    2. Drain the pork, reserving the marinade; in a frying pan set over a high heat, fry the steaks in the oil for 2 minutes on each side. Remove to a warm plate.
    3. Sauté the apples and sugar in the butter until golden. Add the cabbage and pour in the marinade. Cook for 5 minutes, stirring, until softened. Season.
    4. Serve with the pork and some boiled potatoes or steamed rice.
