    Caramelised Potatoes

    • Cooking time: 10 minutes

    Serves: 6


    • 1kg small potatoes
    • 30g granulated sugar
    • 50g unsalted butter


    1. Boil the potatoes in their skins for 15-20 minutes or until cooked. When cool enough to handle, peel off the skins with a small knife.
    2. Heat the sugar in a frying pan over a medium-low heat for 2-3 minutes, then add the butter. When it starts foaming, add the potatoes and turn to coat in the mixture.
    3. Cook for a further 4-5 minutes until nicely browned, then serve.
