    Carbonade of Beef

    You can't beat a warming casserole on a cold winter's day. The slow cooking allows the flavours to develop and mingle. Here is a recipe for traditional casseroles.

    Serves: 4

    Ingredients

    • 450g Waitrose Aberdeen Angus Diced Braising Steak
    • 2tbsp hot olive oil
    • 2 peeled and sliced onions
    • 1tbsp plain flour
    • 225ml brown ale
    • 2tsp tomato ketchup
    • Potatoes
    • Parsley
    • Salt
    • Pepper

    Method

    1. Seal 450g Waitrose Aberdeen Angus Diced Braising Steak in 2tbsp hot olive oil and transfer to a casserole. Fry two peeled and sliced onions in the same pan until brown, sprinkle with 1tbsp plain flour.
    2. Stir in 225ml brown ale, 2tsp tomato ketchup, salt and pepper and add to the casserole.
    3. Cover and place in a preheated oven 170°C, gas mark 3, for 1 hour 45 minutes or until tender. Serve with mashed potato and parsley.
