    caribbean chicken and mango

    An easy, tasty, summer sun recipe found in an old travel magazine. Approx 10 mins prep, 35 mins cooking time

    • Total time: 45 mins

    Serves: 4


    • 4 chicken breasts
      4 fl oz chicken stock
      2 oz flour
      2 tbsp curry powder
      1 tsp allspice
      2 ripe mangoes
      4 fl oz coconut milk
      olive oil or sunflower oil
      sal & pepper to season


    1. Cut chicken into thin slices, toss in the flour, curry powder and allspice
    2. Pan fry chicken in the oil until lightly golden
    3. Gradually stir in the coconut milk and stock, season and bring to the boil. Simmer for 2-3 minutes.
    4. Peel and slice the mangoes and arrange in a casserole dish.
    5. Add the curried chicken mixture on top
    6. Bake in the oven at 200c / gas mark 6 for 30 mins until the sauce is bubbling and the mango is tender
    7. Garnish with grated coconut or chopped parsley. Serve with rice
