    Carrot and Cardamom Purèe (for 2)

    • Cooking time: 30 minutes
    • Total time: 40 minutes 40 minutes

    Serves: 2


    • 2 whole cardamom pods
    • 3 small carrots, roughly chopped
    • 75ml vegetable stock
    • 1 tsp caster sugar
    • Knob of butter


    1. Split open the cardamom pods, discard the shell and finely grind the seeds in a pestle and mortar. Place this with the carrots, stock, sugar and 75ml water in a saucepan. Bring to the boil, cover and simmer for 25-30 minutes or until tender. Strain.
    2. Blend until smooth in a food processor. Stir in the butter until melted, season and serve.
