    Carrot and Cardamom Purèe (for 8)

    Serves: 8

    Ingredients

    • 50g butter
    • 6 whole cardamom pods
    • 11 large carrots, roughly chopped
    • 325ml vegetable stock
    • 4 tsp caster sugar

    Method

    1. Split open the cardamom pods, discard the shell and finely grind the seeds in a pestle and mortar. Place this with the carrots, stock, sugar and 325ml water in a saucepan. Bring to the boil, cover and simmer for 25-30 minutes or until tender. Strain.
    2. Blend until smooth in a food processor. Stir in the butter until melted, season and serve.
