    Champagne Summer Fruit Salad

    • Preparation time: 20 minutes

    Serves: 8


    • 4 tbsp Grand Marnier
    • 6 tbsp caster sugar
    • 6 ripe peaches
    • 450g strawberries
    • 250g red or white currants or blueberries
    • 300g raspberries
    • 1 bottle good champagne, chilled


    1. Mix the Grand Marnier and caster sugar in a large bowl. Wash, stone, quarter and, if easy, peel the peaches before cutting into thin slices. Mix into the sugary alcohol, making sure that the pieces are well coated. Wash and hull the strawberries, then depending on their size, cut into slices, halves or quarters. Gently mix into the peaches. Wash the currants and strip from their stems before adding to the fruit with the raspberries. Transfer to a sealed container and chill until needed.
    2. Just before serving, tip the fruit with its sugary juices into your chosen bowl. When everyone is ready for pudding, open the bottle and very slowly pour into the salad. The sugar will react with the alcohol making the champagne froth like mad. Add enough to nearly cover the fruit. Mix gently and serve.
