Char-grilled Vegetable Skewers

This is a simple, but enjoyable recipe, that is perfect for barbecues or oven-cooked, and family do's now that Summer's here!

Serves: 4


1 Red Pepper
1 Green Pepper
1 Large Red Onion
1 Box of cherry tomatoes
1 small Courgette
5-6 Small Mushrooms
1-2 Tablespoons of Soy Sauce
1-2 pinches of Garlic
1-2 Tablespoons of Honey

4 Wooden Skewers (soaked in water)
1 small bowl
Chopping Board
Basting Brush


  1. Start by soaking the wooden skewers in water. This is to make sure the skewers don't burn.

  1. Then start cutting up the peppers and onion in small, chunky squares.

  1. Next slice the mushrooms and courgettes into thick slices.

  1. When everything's been prepared (vegetable wise), put the vegetables onto the skewer carefully, making sure the wood doesn't splinter or snap.

  1. Next up, you have to make the marinade. In the small bowl, mix the garlic, honey and soy sauce. This will make a sweet and sticky marinade, perfect for the vegetables

  1. Brush the marinade thickly onto the skewers. If there isn't enough, you can always make more judging by how much you need.

  1. Finally, grill the skewers (On the barbecue or in the oven) and make sure they are done on both sides before making your own judgement on how you like them!

  1. Enjoy with salad, some meat and a few chips and a nice cold drink; Finally, Summer's here!
