    Chargrilled Tuna with Chilli Coriander Butter

    Serves: 6

    Ingredients

    • 6 small tuna steaks
    • 1 tablespoon olive oil
    • 85g butter, softened
    • Half a green chilli, deseeded and finely chopped
    • 2 tablespoons chopped coriander
    • 1-2 tablespoons lime juice
    • Salt and freshly ground black pepper

    Method

    1. Beat together the butter, chilli, coriander and lime juice. Season to taste. Spoon the mixture onto a piece of greaseproof paper, in a sausage shape. Roll up and chill.
    2. Preheat a griddle on the hob. Rub the steaks in the oil and season. Grill for 2-3 minutes on each side until cooked outside and pale pink inside. Cut the butter into discs and place a few on each steak. Serve with the bean salad, above, and crisp lettuce leaves.
