    Chargrilled Vegetable Quinoa Salad

    • Preparation time: 21 minutes to 23 minutes
    • Total time: 21 minutes to 23 minutes 25 minutes

    Serves: 4

    Ingredients

    • 20g pack flat leaf parsley
    • juice of 1 small lemon
    • 225g quinoa
    • 3 tbsp olive oil
    • 1 red onion, sliced
    • 1 courgette, sliced
    • 1 red and 1 yellow pepper, deseeded and sliced

    Method

    1. Prepare the barbecue to a medium heat.
    2. Toss 1 red and 1 yellow pepper, deseeded and sliced, 1 sliced courgette and 1 sliced red onion in 2 tbsp olive oil and some seasoning.
    3. Barbecue for 6-8 minutes, turning often, until just tender and chargrilled. Set aside.
    4. Meanwhile, put 225g quinoa with 450ml boiling water in a saucepan. Cover, return to the boil, reduce the heat slighlty and simmer rapidly for 10 minutes or until the grains have cracked and the liquid has been absorbed. Set aside covered, for 5 minutes, then tip into a large bowl.
    5. Add the vegetables, 1 tbsp olive oil, the zest and juice of 1 small lemon and 20g pack flat leaf parsley, roughly chopped, and gently mix. Check the seasoning and serve.
