    Cheddar and Bacon Gratin

    Ready in 40 minutes.

    Serves: 4

    Ingredients

    • 1 tbsp Olive oil
    • 200g Dry-cure unsmoked lardons
    • 450g Parsnips, peeled and cut into 1.5cm cubes
    • 450g Potatoes, peeled and cut into 1.5cm cubes
    • 180ml Crème fraîche
    • 75g Extra mature English Cheddar
    • 2 tbsp Finely chopped chives
    • ½ tsp English mustard powder
    • ¼ tsp nutmeg

    Method

    1. Preheat the oven to 200C/ gas 6. Warm the oil; sauté the lardons until they start to colour. Add the parsnips and potatoes; sauté for 5 minutes.
    2. In a large bowl, whisk the crème fraîche, half the cheddar, chives, mustard and nutmeg; season. Stir in the bacon mix.
    3. Pour into a gratin dish, sprinkle with the remaining cheddar, cover with foil and bake for 25 minutes. Take off the foil and cook for 5 minutes more.
