Cheese & Onion Pie

Although a simple recipe, it is a great favourite with all my family and friends. This makes two pies

  • Total time: 45 minutes approx.

Serves: 6


  • l.lb self raising flour
    1/2 lb Waitrose butter
    3 Waitrose organic eggs
    200mls organic milk
    400g Waitrose mature cheese
    1 large onion
    Olive Oil
    Pre-heat oven to 180oC


  1. Mix flour and butter to make pastry (to ensure that there is sufficient pastry for the strips of pastry decoration use one ounce more flour and a little butter or Flora to make the extra pastry. Add one egg and a little milk mixed together to make a suitable pastry for rolling.
  2. Cover the base of the baking dishes with a thin layer of butter or Flora. to stop the pies sicking to the bases. Chop the onion into small pieces and fry in a little Olive Oil until soft. Cover the bases with a layer of pastry about 5mm. Trim the edges. Blind bake the pastry bases for ten minutes.
  3. Grate cheese but not too finely. Remove the pie bases from the oven and divide the cooked onion into two and add to the bases. Cover onion with a good layer of cheese then cover that with a mixture of one egg and milk beaten together to a measure of 100mls.
  4. If your pie dishes have a narrow flat edge, the pastry will be hard and dry after the blind baking and will need to be brushed with a little milk to soften them., so the strips of pastry decoration will stick when applied. The strips of pastry are then placed over the cheese in the form of gridlines. Brush the strips with a little milk so that they will appear nicely brown like the rest of the pie.
  5. Return the pies to the oven and cook for 30 to 35 minutes.
