CHEESE STRAWS 1984

These have been made by my family since 1984 for eating with drinks before the christmas meal.

Serves: 6

Ingredients

  • 480g.PLAIN FLOUR
    360g.STRONG GRATED CHEDDAR CHEESE
    360g.BUTTER OR HARD MARGARINE
    2.5g.DRIED MUSTARD POWDER
    4 EGG YOLKS
    PINCH OF SALT
    SHAKE OF CAYENNE PEPPER
    COLD WATER IF NECESSARY

Method

  1. Beat the butter until really soft and white.Add all other dry ingredients and mix well.Add egg yolks and mix to make a firm dough,kneading well until smooth.Roll out thinly and cut into straws 3" x 1/4".Place on a baking sheet and bake at 200°c for 10-15 minutes or until brown.
