    Cheesy Bread Bake With Cherry Tomatoes

    • 400g Duchy Originals Mixed Seeded Loaf, sliced
    • 25g Rachel’s Organic Butter, softened
    • 4 Waitrose Medium Free Range Organic Columbian Blacktail Eggs
    • 568ml carton organic whole milk
    • 25g pack fresh organic basil, chopped
    • 375g Waitrose Organic Cherry Tomatoes on the Vine
    • 175g Yeo Valley Organic Mature Cheddar, grated
    • 25g Ferrari Organic Parmigiano Reggiano, grated


    1. Preheat the oven to 180°C, gas mark 4. Cut each slice of bread in half diagonally to form triangles, then lightly spread with butter. Whisk together the eggs and milk, season and stir in the basil.
    2. Remove the tomatoes from their vines, reserving 2 small bunches. Pour a little of the egg mixture into the base of a 1.5-litre ovenproof dish, arrange a layer of bread on top and sprinkle over half of the cheese. Scatter the loose tomatoes over the cheese, then pour over more of the egg mixture.
    3. Repeat the layers of bread and cheese, then pour over the last of the egg mixture. Top with the reserved tomato clusters.
    4. Place the dish in a deep roasting tin then pour boiling water into the tin until it comes halfway up the sides of the dish. Place in the oven and bake for 40-45 minutes, or until the top is crisp and lightly golden, and the egg mixture has set. Serve with Waitrose Organic Roquette.

    Cook's tips

    For a different flavour, try adding 2 tbsp sliced, stoned, organic black olives. Get ahead by preparing the dish the night before, then chill until ready to cook the next day.

    Drinks recommendation

    Italian Bianco will complement beautifully the Mediterranean flavours of tomato, basil and Parmigiano Reggiano in this dish. Serve well chilled.
