    Cheesy Pasta

    • Preparation time: 10 minutes
    • Cooking time: 15 minutes
    • Total time: 25 minutes 25 minutes

    Serves: 4


    • 400g fusilli pasta
    • 8 slices maple-cured bacon
    • 20g butter
    • 20g plain flour
    • 1 tsp English mustard
    • 300ml milk
    • 60g well-flavoured Cheddar, grated
    • 2 tbsp chopped parsley (optional)


    1. Preheat the oven to 200°C/gas mark 6. Bring a pan of water to the boil and cook the pasta according to packet instructions. Roast the bacon in the oven for 10-15 minutes until crisp.
    2. Meanwhile, melt the butter in a saucepan over a low heat, stir in the flour and mustard and cook for 1 minute. Add the milk gradually, stirring, until the sauce is smooth and thick. Stir in the cheese.
    3. Drain the pasta and toss with the sauce. Spoon onto plates, crumble the bacon on top and scatter with parsley if you like.
