Cherry Scones

These scones were a recipe from my late older sister, they are very light and can be rolled and cut to shape or (as I do) grab a handful and smack it straight onto the baking tray! They have a more rustic look that way.

  • Total time: 30 Mins (i/c cooking)

Serves: 6

  • 1lb self raising flour / 2ozs granulated sugar / 4ozs good
quality margarine / 4ozs chopped glace cherries / 4 fluid ozs of
milk (this can be skimmed or semi-skimmed)

  1. Sieve flour and sugar into a deep bowl, break up marg into dry mix till looks like fine sand, add cherries then gradually stir in milk and it will turn into a dough. Roll out onto a floured surface should make about 6 huge scones, or more if you make them smaller!
  2. Place onto a baking tray lined with non-stick baking paper and brush with a little milk. Bake at oven temp 210c / Gas mark seven in the centre of the oven for 15 mins till golden. These are good on the day and the next, after that I find they get a little dry but they do freeze well Enjoy!
