    Chick Chick Curry

    A simple curry thats fresh and light to taste.

    • Total time: 20-30 minutes

    Serves: 2


    • 1 or 2 free range chicken breasts
      4 Large Organic tomatoes
      Blue Dragon Light Coconut Milk
      3 tbsp of medium curry powder
      1 whole onion chopped
      3 small sweet peppers
      Salt and pepper
      Fresh Green chilli (optional)


    1. Pour some oil into a pan and heat on a low heat for five minutes. Add a chopped red onion and let it sweat for 3 more minutes. Spoon in curry powder and add chopped tomatoes and peppers. Let stew for 5 minutes.
    2. Chop the chicken breasts into small chunks and add to the pan, stir and toss a little until chicken starts to turn light brown and tomatoes juices are running. Slowly pour in half a can of coconut milk and stir for 5 more minutes. Finally let it stew and bubble for 10 mintues stiring occasionally.
    3. Serve in a bowl along side some brown rice and seasoning over the top and tuck in.
