Chick Pea Tagine

A most delicious & filling meal, using 'every day' ingredients. Complete as a meal on its own, or serve with rice.

Serves: 4


  • 1 tin Chick-Peas
    1 tin chopped tomatoes
    1 onion (chopped)
    2-4 cloves garlic (chopped)
    2 tsp garam masala
    1 tsp curry powder
    1/2 cup sultanas or raisens (or both!)
    1/2 cup dried apricots (chopped)
    1 desertspoon peanut butter
    1/4pt or 150ml apple juice concentrate
    1/2 cup broken cashew nuts
    juice 1/2 lemon (not necessary)


  1. Fry onion & garlic for about 10mins until soft.
  2. Spinkle over the garam masala & curry powder, then add the tomatoes, dried fruit, peanut butter and apple juice to make the sauce. Simmer for 20mins.
  3. Roast the cashews for a while in the oven (5mins approx)
  4. Drain, and combine the chickepeas with the sauce.
  5. Bring to the boil, add the splash of lemon juice to taste.
  6. Mix in the cashews before serving.
