    Chicken, Rocket and Papay Platter

    Serves: 4


    • 1 papaya
    • 3 cooked chicken breasts
    • 1 bag Waitrose Rocket Solo
    • 1 small red chilli
    • 1tsp finely chopped root ginger
    • Juice of 1 lime
    • 2tsp caster sugar
    • 2tbsp Waitrose Light Olive Oil


    1. Halve 1 papaya and scoop out and discard the seeds. Peel off the rind and thinly slice the flesh. Tear 3 cooked chicken breasts into bite-size pieces and arrange on a platter with a bag of Waitrose Rocket Solo and the papaya.
    2. Halve and deseed 1 small red chilli, chop finely and place in a bowl with 1 tsp finely chopped root ginger, the juice of 1 lime, 2 tsp caster sugar and 2 tbsp Waitrose Light Olive Oil.
    3. Season, whisk together and drizzle over the salad before serving.
