Chicken and bacon casserole

  • 4 large pieces of chicken (breasts, thighs), seasoned
    Oil for frying off chicken
    4 slices back bacon, sliced
    1 medium onion, sliced
    150ml/1/4 pt white wine
    100ml/31/2 water
    Pot of Duchy poultry gravy
    4 medium potatoes, sliced thinly
    3 medium leeks, trimmed,sliced and washed
    Large pinch nutmeg
    Large pinch sage


  1. Preheat oven to 180/350/gas 4
  2. Season skin on chicken and brown in oil in a large casserole (5 mins) Remove from casserole
  3. Fry bacon and onion until soft (5mins)
  4. Add wine, gravy, water and season of nutmeg and sage. Reserve in large jug.
  5. Layer potato at bottom of casserole. Add chicken pieces and leeks and Pour over gravy mix Cover and bake for 2hours
