    Chicken and Parma Wraps with Hot Sweet Potatoes

    Based on a Perfectly Balanced meal, which comes with a sachet of sauce, the addition of sweet potato and chilli gives this classic Italian pairing of chicken and Parma ham a modern fusion flavour.

    • 2 x 395g packs Waitrose Perfectly Balanced Parma Ham Chicken Wraps
    • 6 small sweet potatoes, about 750g, peeled and cut into 1.5cm cubes
    • 2 red chillies, deseeded and roughly chopped
    • 2 tbsp fresh rosemary, finely chopped
    • 1 tbsp olive oil
    • ½ tsp salt
    • Freshly ground black pepper


    1. Preheat the oven to 190°C, gas mark 5. Arrange the chicken on a baking sheet and cook according to pack instructions.
    2. Meanwhile, place the sweet potatoes, chillies and rosemary in a shallow baking tray in a single layer. Drizzle with the olive oil and season. Bake for 20 minutes, or until the sweet potatoes are golden.
    3. Just before the chicken and sweet potatoes are ready, pour the sachet of roasted red pepper and tomato sauce into a small pan, bring to the boil and simmer for 1-2 minutes.
    4. Using a potato masher, lightly crush the sweet potatoes on the baking tray. Divide between 4 plates, spoon over the sauce and top each one with a chicken wrap.
