    Chicken Chowder

    This satisfying soup combines store cupboard and fresh ingredients to make an easy supper.

    Serves: 4


    • 1 large leek, washed, trimmed and thinly sliced
    • 2 cloves garlic, crushed
    • 3 tbsp olive oil
    • 350g pack Waitrose Ready to Cook Rosemary & Garlic Potatoes, diced
    • 2 x 600g cartons Waitrose Cream of Chicken Fresh Soup
    • 2 x 190g packs Waitrose Cooked Chicken Skinless Breast Fillets, chopped
    • 330g tin Waitrose American Sweetcorn, drained
    • Salt
    • Freshly ground black pepper
    • 1 pack fresh flat leaf parsley, chopped
    • 200g pack Waitrose Danish Smoked Lardons
    • Strips of fried leek, to garnish
    • 100g pack Waitrose Sea Salt & Herb Croutons, to serve


    1. Fry the leek and garlic in the olive oil until soft. Cook the potatoes according to the instructions on the pack.
    2. Pour the soup into a pan and warm through over a low heat. Add the potatoes, chicken, leek and garlic mixture and sweetcorn. Simmer for 5-7 minutes. Season to taste. Add the parsley. Garnish with cooked lardons and leeks. Serve with croutons.

    Cook's tips

    To prepare the bacon lardons, heat a frying pan until hot and cook for 4-5 minutes until crispy.
