    Chicken low-Kalhari Balti

    This simple balti is delicious plus low in saturated fat and calories. After starting a diet club last year, I put my culinary skills to good use making low fat options that were still very tasty. I was so proud of this that I shared it on the clubs forums and I got a very positive response from other members too. If desired, you can add any other veg that you may like to the recipe. Serve with boiled rice, low fat nan or to make it even healthier pumkin or butternut squash chips go well.

    Serves: 2

    Ingredients

    • Low fat spray oil
      2 Skinless Chicken Breasts - cut into pieces
      1 large onion - chopped
      1 large thumb of ginger - grated
      3 Garlic cloves - crushed to a paste
      A fist full of coriander - chopped
      1tbsp good quality curry powder
      3 chilli's (optional)
      Half a cup of water
      Half a large pot of very low fat natural yoghurt.
      Seasoning

    Method

    1. Fry onion, chicken and ginger in a non stick wok until browned. Add curry powder, chillies and garlic (made into a paste by crushing and chopping with a little salt) Stir fry until the mixture starts sticking to the Wok, then add half a cup of water. bring to the boil then reduce to a simmer. Add 3/4 of the coriander, the yoghurt and season. Simmer for 10 mins, then serve in 2 balti bowls, and sprinkle over remaining coriander.
