    Chicken Salad


    • 2 handfuls of rocket
    • 1 skinless breast of chicken, poached
    • 20g sultanas, soaked
    • 20g pine nuts, toasted
    • 1/2 pomegranate, seeds reserved
    • 10ml aged balsamic vinegar
    • 20ml olive oil


    1. Cut the rocket into even strips and place in a serving bowl. Place the shredded chicken breast on the rocket, top with sultanas, pine nuts and pomegranate seeds and dress with balsamic vinegar and olive oil. Season to taste.
