    Chicken with Dates and Almonds

    Serves: 2

    Ingredients

    • 2 tbsp olive oil
    • 2 skinless boneless chicken breast fillets
    • 2 tsp seasoned flour
    • 6 halved and pitted Hadrawi dates
    • 2 tbsp roasted marcona almonds
    • 1 tsp ground cumin
    • 1 tsp ground cinnamon
    • 300ml chicken stock
    • 1 lemon

    Method

    1. Heat 2 tbsp olive oil in a frying pan. Toss 2 skinless boneless chicken breast fillets in 2 tsp seasoned flour and fry for 5 minutes until lightly browned. Stir in 6 halved and pitted Hadrawi dates, 2 tbsp roasted marcona almonds, 1 tsp ground cumin and 1 tsp ground cinnamon.
    2. Stir well, add 300ml chicken stock, season and bring to the boil. Simmer for 20 minutes, until the chicken is thoroughly cooked. Just before serving, squeeze in the juice of a lemon. Cut each chicken breast fillet into 4 slices and serve with rice or couscous.
