    Chicken with Garlic and Rosemary

    • Cooking time: 45 minutes to 50 minutes
    • Total time: 55 minutes to 1 hour 60 minutes

    Serves: 4

    Ingredients

    • 1 pack Waitrose Fresh British Free Range Chicken 2 Legs
    • 1 pack Waitrose Fresh British Free Range Chicken 2 Part Boned Breast
    • 1 tbsp plain flour
    • 25g butter
    • 1 tbsp olive oil
    • 4 cloves garlic, sliced
    • 1 pack fresh rosemary
    • 300ml dry white wine
    • salt
    • freshly ground black pepper

    Method

    1. Season the chicken all over and toss in the flour. Heat the butter and oil in a large, heavy-based pan. Add the chicken and fry for about 5 minutes until evenly browned. Add the garlic and rosemary. Pour in the wine and season.
    2. Bring to the boil, then reduce the heat, cover and cook gently for 35-40 minutes, until the liquid has reduced. Check that the chicken is cooked by piercing the thickest part of the leg with a skewer it is ready when the chicken juices run clear and there is no pink meat. Serve with new potatoes garnished with chopped parsley, and green beans.
