    Chicken with Thai-Style Noodles

    Ingredients

    • 2 tbsp vegetable oil
    • 340g pack Waitrose Fresh British Chicken Mini Fillets
    • 300g pack Eastern Inspirations Thai Stir Fry
    • 4 tsp Bart Spices Thai Fry Paste
    • 1 tsp Bart Spices Thai Fish Sauce
    • 4 tbsp cold water
    • Sharwood's Thai Stir-Fry Rice Noodles
    • Coriander leaves

    Method

    1. Heat 2 tbsp vegetable oil in a wok. Add a 340g pack Waitrose Fresh British Chicken Mini Fillets and stir-fry for 3-4 minutes, until thoroughly cooked.
    2. Add a 300g pack Eastern Inspirations Thai Stir Fry, first lightly crushing the lemon grass stalk and finely chopping the red chilli. Stir-fry for 2 minutes. Stir in 4 tsp Bart Spices Thai Fry Paste, 1 tsp Bart Spices Thai Fish Sauce and 4 tbsp cold water. Simmer for 1-2 minutes.
    3. Remove the lemon grass and serve with half the Sharwood's Thai Stir-Fry Rice Noodles. Garnish with chopped fresh coriander leaves.
