    Chickpeas with rapini

    Quick, health and easy

    • Total time: 20mins

    Serves: 4


    • Olive oil
      1 onion
      1 clove of garlic
      2 Italian sausages or favorite pre-cooked sausages - diced
      1 can of chickpeas - rinsed and drained
      1 bunch of rapini
      1 table spoon (or to taste)Vinegar of choice(red, sherry) I'm not a purist
      4 pieces of bottled roasted red pepper drained and diced


    1. Steam rapini 4-5 mins. to soften and remove some bitterness remove from heat and let cool Chop onion and garlic To pan heat 2 table spoon of olive oil Add onion and cook until soften - do not brown Add garlic - stir until fragrant but not brown
    2. Add sausage to garlic and onions - warm thoroughly
    3. Roughly chop the rapini and add to sausage mixture- stir and warm through Add rinsed can of chickpeas and stir to blend into sausage and rapini Add diced roasted red pepper Add vinegar, salt and pepper to taste
