    Chicory, Stilton and Apple Salad

    • 3 medium heads white chicory
    • 50g bag Waitrose Lamb's Lettuce
    • 2 crisp, sweet apples such as Cox's
    • Juice of ½ lemon
    • 100g Stilton, Gorgonzola, Cashel Blue or Lord of the Hundreds
    • ½ x 100g bag walnut pieces For the dressing
    • 1½ tbsp sunflower oil
    • 1½ tbsp walnut oil
    • 2 tsp balsamic vinegar
    • 1 tsp clear honey


    1. Separate the chicory leaves, rinse, drain and mix with the lamb's lettuce in a large bowl. Quarter and core the apples. Cut each quarter into 4 thin slices, brush with lemon juice and set aside. Crumble the cheese with a fork (if you are using Gorgonzola, it may be easier to chop it with a knife).
    2. Whisk all of the dressing ingredients together in a jug or small bowl and season well. Pour the dressing over the leaves and toss gently to coat. Divide the salad between 4 starter plates, add the apple slices and walnuts and scatter the cheese on top. Serve immediately.
