    Chicory Leaf with Papaya, Coconut, Chilli, Lime and Coriander

    Ingredients

    • 1/2 a large papaya
    • 3/4 of the coconut from a pack of Waitrose Fresh Coconut & Tropical Fruit Coulis
    • 2 tbsp chopped coriander leaves
    • 1 tsp deseeded, chopped red chilli
    • Fresh lime juice
    • 12 medium-sized chicory leaves.

    Method

    1. Deseed and peel 1/2 a large papaya and cut into small dice. Take about 3/4 of the coconut from a pack of Waitrose Fresh Coconut & Tropical Fruit Coulis, slice into slivers, then crumble into shards. Mix the papaya and coconut with 2 tbsp chopped coriander leaves, 1 tsp deseeded, chopped red chilli and a good squeeze of fresh lime juice. Refrigerate this mixture until you are ready to serve. Just before serving, use the mixture to fill 12 medium-sized chicory leaves.
