    Children's Truffles

    Since these are for children, they are a little less rich than the authentic Belgian variety. The high-quality chocolate used still gives a full flavour, though, and the cream is replaced with chocolate sponge cake crumbs and ground almonds. Making the truffle balls and rolling them in cocoa powder is exactly the kind of 'cooking' that children enjoy most.

    • 2 x 100g bars Waitrose Organic Belgian Milk or Plain Chocolate
    • 1 x Waitrose Chocolate Loaf Cake, crumbled
    • 50g Waitrose Ground Almonds
    • Cocoa powder, for dusting
    • Supercook Writing Icing Pens or Supercook Ready to Roll Coloured Icing Regal Ice, to decorate


    1. Break up the chocolate and place in a heatproof bowl over a pan of very gently simmering water. Leave until melted, stir until smooth, then remove the bowl from the pan.
    2. Stir the cake crumbs and ground almonds into the chocolate, mixing well. Chill the mixture for 30 minutes. Roll the mixture into balls, using about 1 heaped tsp of the mixture for each, then toss gently in cocoa powder to coat. Set the truffles in petits fours cases. They can also be decorated to look like mini Christmas puddings using Supercook Writing Icing Pens or scraps of white icing and tiny holly leaves and berries made from coloured marzipan or icing. Chill until firm, then set in decorated boxes. Eat the truffles at room temperature.
