chilli and lime pork

this is a simple but special supper.

  • Total time: 25 minutes

Serves: 4


  • 4 pork loin steaks
    1-2 red chillies, deseeded and finely diced
    grated zest and juice of 2 limes
    1 tbsp olive oil
    15g fresh coriander, finely chopped
    1 small ripe mango, diced
    salt and freshly ground black pepper


  1. Place pork in small bowl with most of the chilli, the grated zest and juice of 1 lime and the oil. Mix well and leave to marinate for at least 10 minutes.
  2. Preheat a griddle or frying pan, add the steaks and cook for 6-8 minutes on each side until cooked through and golden.
  3. Meanwhile, mix together the coriander, mango and the remaining lime zest, juice and chilli. Add seasoning to taste.
  4. Serve the pork steaks topped generously with the salsa. This is delicious served with noodles tossed in a little soy sauce with a few finely chopped salad onions.
