    Chilli-ginger squid

    Ready in 15 minutes.

    Serves: 4


    • 900g cleaned squid, cut into rings
    • 1 tbsp essential Waitrose vegetable oil
    • 2 garlic cloves, finely sliced
    • 1.5cm fresh root ginger, peeled and chopped
    • 2 red chillies, deseeded and shredded
    • 4 essential Waitrose salad onions, chopped
    • 1 tsp caster sugar
    • ½lime, juice
    • 2 tbsp chopped coriander


    1. Pat the squid dry with kitchen paper. Heat the oil in a wok or frying pan over a high heat and add the garlic, ginger and chilli. Cook for 30 seconds, then add the squid and cook for 1 minute more.
    2. Add the salad onions, caster sugar, lime juice and some seasoning. Cook for another 30 seconds, then toss in the coriander. Serve with plain rice and steamed greens.
