Chilli lime and Mango Chicken

Fresh and light & healthier variation on coronation chicken Using storecupboard ingredients Great for a picnic ,barbeques and lazy lunches

Its fresh and tasty and looks great served in a big bowl for everyone to help themselves to I always get a wow when serving it as it is so simple but yet so refreshing!!!

  • Total time: 10 mins prep + none cooking

Serves: 4


  • 1 ripe Mango - cut into approx 1cm cubes
    4 Spring onions finely chopped
    1- 2 Red chillies deseeded and finely chopped (I use frozen cooks ing)
    juice of 1-2 limes (to taste)
    2 cold cooked chicken breast cut into chunks
    1 Romaine lettuce or 2 little gems sliced or shredded
    1 large handful of fresh coriander chopped


  1. Tumble the mango cubes and any juice they make into a bowl mix with the chopped spring onion and chilli and squeeze over the lime juice (to taste) Leave to steep while chopping the chicken,shredded lettuce and coriander then add them all to the mango mix using your hands toss to combine
