    Chinese-inspired Salmon and Noodles

    A quick and easy Chinese-inspired fish dish which is ideal for a weekday supper but also special enough to serve to guests. Filled with fresh flavours and healthy ingredients, this dish can be varied according to what vegetables are in season -- in the summer I like to include broccoli, sugar snap peas, green beans and spinach. Best of all, there's only one pan to wash!

    Why should your recipe win?
    I've been making this recipe for many years and it is a firm favourite with my family and friends. In fact, it is one of my husband's favourite meals. It is light but filling and loaded with flavour. It is also very flexible - you can use whatever vegetables are in season (and it's a great way to use up small bits of vegetables that you might have left over from other recipes). But best of all, it is quick and easy, and with only one pan to wash, washing up is a breeze!

    • Total time: 15 minutes prep + 20 minutes cooking

    Serves: 2


    • - 2 skinless salmon fillets
      - 1 Tbsp olive oil
      - 1 clove garlic, finely chopped
      - 1cm piece of fresh ginger, peeled and finely chopped
      - 1/2 green chilli (or more, depending on your taste), finely chopped
      - enough mixed fresh vegetables to make a stir fry for two, cut into bite-sized pieces, e.g., salad onions, spinach, mushrooms, broccoli, sugar snap peas, green beans, etc.
      - 1 packet ready-to-heat noodles (from the chiller cabinet)
      - 125ml chicken stock
      - 1 Tbsp soy sauce


    1. Heat the olive oil in a large frying pan or wok. Add the garlic, ginger & chilli and stir fry briefly. Add the vegetables all at once and stir to coat with the oil. Pour over the chicken stock & soy sauce and set the salmon fillets on top of the vegetables. Cover the pan and simmer gently for 10-12 minutes. When the salmon is almost cooked, add the noodles to the pan and stir gently. Cover & cook for 3-4 minutes. Serve immediately on warmed plates.
