    Chiva-Som Vegetable Stock

    This is best made fresh, but can be refrigerated for 2-3 days, or frozen.

    • Preparation time: 5 minutes
    • Cooking time: 1 hours
    • Total time: 1 hour 5 minutes 60 minutes 5 minutes

    Makes: About 900ml


    • 2 tomatoes, quartered
    • ¼ small cabbage (preferably Chinese cabbage), cut into large pieces
    • 4 stalks celery, cut into large pieces
    • 1 medium carrot, cut into 6


    1. Combine all the ingredients in a large pan and add 1 litre of water. Bring up to a boil, and simmer, uncovered, for 1 hour. Strain and discard the vegetables. Use straight away, or cool and refrigerate or freeze.
